GRILLED HALLOUMI WITH VEGETABLES
Cooking Time: 10 minutes
Yield: 4 servings
¼ cup olive oil
1 lb. DODONI Halloumi, sliced
2 medium zucchini, sliced
1 bunch asparagus
1 red pepper, sliced wide
A handful of cherry tomatoes, sliced
Salt and pepper to taste
Lightly oil the grill grate and prepare a hot grill.
Brush vegetables with olive oil and season with salt and pepper.
Grill vegetables until tender and nicely charred, turning occasionally.
Grill halloumi, turning occasionally, for 2 to 6 minutes, until grill marks appear.
Remove cheese to the platter with vegetables and drizzle with olive oil.
